Muffin Base Pizzas 4

Deborah is the Kitchen Supervisor for three of our Early Years' services in Exeter - Beacon Nursery, Cedars Pre School and Whipton Children’s Centre. She uses the food to teach the children some basic cooking and baking skills.

These three services are now a Charity Food Surplus Partner for their local Marks and Spencer stores. And so the retailer has been supplying them with fresh fruit and vegetables.

In this way, bananas are suddenly turned into tasty milkshakes, muffins or cakes. And when a surplus of lemons arrived it was all hand on board to make lemonade for everyone.

Deborah says, "I have put together a couple of tried and tested recipes that our children at Beacon Nursery and Cedars Pre School regularly enjoy.

"The first is a tea time favourite, Muffin Base Pizzas. These are served with a selection of salad items, all prepared by the children."

What you'll need

Toasting Muffins
Tomato Puree
Mozzarella or Cheddar Cheese
Tomatoes
Mushrooms
Peppers

  1. Slice the muffins in half and lightly toast.
  2. Spread each half with tomato puree.
  3. Top with slices of cheese, tomatoes, peppers and mushrooms.
  4. Place under a hot grill until the cheese melts.
  5. Serve with salad items such as lettuce, tomatoes and cucumber sticks.
It’s so important for children to develop a love of healthy eating at a young age. Their relationship with food – whether it be good or bad – is something they carry with them throughout their entire lives.
